Hyderabadi cuisine is the great fusion of Mughal court cooking and Telugu Deccani traditions - slow-cooked, royal, generously spiced. The city of Hyderabad has given India its most famous dish (biryani), some of its richest meat dishes (haleem, pathar ka gosht), and a unique sweet course of its own.
Layered slow-cooked rice, yogurt-based marinades, dried fruits and nuts in savoury dishes, and the unmistakable use of ghee and saffron.
