Punjabi food is what most people picture when they think of Indian restaurants: big, hearty, dairy-rich, full-flavoured. It comes from the agricultural heartland of India - wheat, lentils and dairy in abundance, with Mughal and tandoor influences layered on top.
Slow-cooked dals, tandoor-charred breads, paneer in every form, and the dish that defines a Punjabi household: a big cast-iron pot of rajma chawal or dal makhani simmered for hours.
