Kashmiri cuisine is one of India’s most distinctive - gentle, aromatic, often crimson-red, surprisingly mild. It draws from the valley’s harsh winters, Persian heritage, and abundant lamb.
Yogurt-based gravies, fennel and dried ginger as primary spices, very little onion or tomato, and the wedding-feast tradition of "Wazwan" with its 36 courses.
